Are you a Diabetic looking for something sweet or maybe trying to drop a few pounds before summer rolls around well this recipe has all that, only 96 calories and no sugar. A great nutty taste with out the extra sugar.
1 egg, beaten
1/2 cup mashed bananas (about 2 medium bananas)
1/3 cup margarine
1/3 cup no-sugar added pineapple fruit spread
1 tsp. vanilla
1-1/4 cups flour
1/3 cup unsweetened flaked coconut
1/2 tsp.baking powder
1/2 tsp. salt
3/4 cup macadamia nuts coarsely chopped
Combine eggs, banana,margarine,fruit spread and vanilla together. Add flour, coconut,baking powder and salt; mix well. Stir in nuts. Drop tablespoonfuls of dough onto lightly greased cookie sheet. Bake 10 to 12 minutes or until lightly browned.
