Pumpkin Cookies

Recipe for great pumpkin cookies. This is really easy to bake. I always add some pumpkin allspice to mine just a little sprinkle, adds a little more spice taste.
2 cups butter
2 eggs
2 tsp. vanilla extract
2 tsp. baking powder
1 tsp. salt
1/2 tsp. allspice
1 cup chopped walnut
2 cups sugar
2 cups canned pumpkin
4 cups flour (sifted)
1 tsp. baking soda
2 tsp. cinnamon
2 cups raisins
Blend all the ingredients together and roll into small balls on to greased cookie sheet. Bake at 350 degrees for about 15 minutes.
One Pan Stew Bake

This recipe is so easy to make and everyone will think you spent all day in the kitchen.
1 can (24oz.) beef stew
1/4 cup sour cream
1 cup biscuit mix
1/4 cup water
In casserole pan combine beef stew and sour cream. Bake in oven at 425 degrees. while that is baking mix biscuit mix and water to make a soft dough. When stew is hot drop dough mixture by spoonfuls into stew bake about 20 minutes until biscuits are lightly browned. Makes about 2 to 3 servings for more just double up.
Microwave Cupcakes

Kids come home from school and mom I need cupcakes to take to school tomorrow remember. And with our busy live styles we forgot. This is a great quick way to make those cupcakes in no time at all.
1 pkg. cake mix(any flavor)
24 to 30 flat bottom ice cream cones
Prepare cake mix as directed on package. Fill cones with 2 T. batter about half full. Bake six cones at a time microwave for 1 to 1-1/4 minutes on high till toothpick comes out clean. Frost with your favorite icing of just whipped cream.
Chocolate Bars

Yummy recipe that you can change to suit what ever your taste buds are calling for.
2/3 cup shortening
2 cups brown sugar
3 eggs
1/2 tsp. salt
2 cups flour
1 tsp.baking powder
1 cup nuts
1 pkg. of chips (chocolate,M&M’s or butterscotch).
Mix ingredients together and bake in 9 x 13 pan for 25 minutes at 375 degrees. Cool and cut into bars.
Chocolate Chip Pie

If you like chocolate. Do I have a recipe for you! This is a yummy recipe that can be served warm or even frozen to bring out for friends later, If you want to share.
2 eggs
1/2 cup sugar
1 cup margarine , melted and cooled to room temperture
1 (9in.) unbaked pie shell
1/2 cup flour
1/2 cup firmly packed brown sugar
1 ( 6oz.) pkg. chocolate chips
1 cup walnuts
Preheat oven to 325 degrees. In a large bowl beat eggs till foamy. Add flour, sugar, brown sugar; beat well. Blend in melted butter. Stir in chocolate chips and nuts ,( I use walnuts). pour into pie shell and bake for 1 hour. Can be served with whipped cream or ice cream.
Snowball Cookie
Nice Christmas Cookie to bake. Easy recipe without to many ingredients. Good recipe to let the kids help with.
1 cup margarine
1/2 cup powdered sugar
1 tsp. vanilla
2 3/4 cup flour
dash salt
3/4 cup chopped nuts
Mix all ingredients well. Roll firmly into small balls about the size of a walnut. Bake on ungreased cookie sheet. Bake at 350 degrees about 10 to 12 minutes. Roll in powdered sugar let cool and roll in powdered sugar again.
