My sweet heart made these for me on Valentines Day. They where so good I thought I would share the recipe with everyone. Hope you enjoy them as much as I did.
2 Tbsp. butter (softened)
8 slices rye bread
8 slices swiss cheese
3/4 lb. corned beef thinly sliced
1/2 lb. sauerkraut
1/4 cup thousand island dressing
Butter one side of the four slices of bread, and place buttered side down on piece of wax paper. Top each with a slice of swiss cheese and then corned beef. Make sure most of the water is out of the sauerkraut then put sauerkraut on the sandwich, then put thousand island dressing on top of the sauerkraut, add more corned beef then cheese make sure you butter the tops of the last slice of bread. Preheat a griddle and cook sandwiches until golden brown, turning carefully with spatula.
