Appetizer Meatballs

Prepare ahead for a quick treat. This meatball recipe is going to be requested again and again.

I egg, slightly beaten
1/3 cup milk
1/3 cup fine, dry breadcrumbs
1 tablespoon dried minced onion
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon ground allspice
1 Ib. lean ground meat

Combine ingredients and shape into 1-inch balls. Place on rack in a 12″ x 7-1/2″ baking dish. Cover with a paper towel. Raise oven shelf. Cook on HIGH 4 to 7 minutes. BROWN 6 to 7 minutes. Makes about 25 meatballs.

Pork Chops with Scalloped Potatoes

The secret is to slice the potatoes very thin.This is sure to be a family favorite.

1 (10-3/4-oz.) can condensed cream-of-mushroom soup
1/3 cup milk
3 large potatoes, peeled, thinly sliced
1/2 to 1 small onion, thinly sliced
Salt and pepper to taste
4 pork chops (1 Ib.)
Garlic salt Seasoned salt

In a small pan, combine soup and milk. Heat on HIGH 4 minutes. Stir and set aside. In a 12″ x 7-1/2″ baking dish, layer potatoes and onion. Sprinkle with salt and pepper to taste. Pour hot soup mixture over potatoes and onions. Cover and Cook on HIGH 10 minutes or until potatoes are crisp-tender. Lightly sprinkle pork chops with garlic salt and seasoned salt. Arrange over vegetables, placing tenderloin-side toward center of dish. Cover and cook on HIGH 3-1/2 to 4 minutes. Remove cover. Raise oven shelf. BROWN 6 minutes. Makes 4 servings.

Peanut Brittle in the Microwave

You can make this in the microwave so quick and easy. This Peanut Brittle is sooooo good you will love it.

1 cup Raw peanuts
1 cup Sugar
1/2 cup White corn syrup
1/8 teaspoon Salt
1 teaspoon Butter
1 teaspoon Vanilla
1 teaspoon Baking soda

Stir together peanuts, sugar, syrup, salt. Cook 4 minutes on high. Stirring well, cook another 4 minutes. Add butter and vanilla to peanut mixture stirring to blend. Return and cook 2 minutes. Add baking soda and gently stir till foam
Pour onto aluminum foil. Let cool, break into pieces and store air tight container.

Microwave Fudge

When there is no time to bake, you can whip up this yummy fudge in no time at all.

3 cups chocolate chips

1 (14oz.) can Eagle brand milk

1/3 cup confectioners sugar

2 tsp. vanilla

1 cup chopped walnuts

In a 2 quart bowl microwave chocolate chips and milk, uncovered for 2 minutes.Stir until smooth. Stir in sugar and vanilla, then walnuts until well blended. Pour into greased 8 inch square pan spread evenly. Chill until firm. Cut into squares and enjoy.

Microwave Cupcakes

Kids come home from school and mom I need cupcakes to take to school tomorrow remember. And with our busy live styles we forgot. This is a great quick way to make those cupcakes in no time at all.

1 pkg. cake mix(any flavor)

24 to 30 flat bottom ice cream cones

Prepare cake mix as directed on package. Fill cones with 2 T. batter about half full. Bake six cones at a time microwave for 1 to 1-1/4 minutes on high till toothpick comes out clean. Frost with your favorite icing of just whipped cream.
