Guacamole

This is one of our favorites. This is such a yummy recipe.

1 1/4 lb. avocado, peeled and cut into chunks

1 large tomato, peeled, seeded, cut in to eights

1/2 cup chopped green pepper

1/2 cup chopped onion

1/2 cup plain yougurt

1 tbs.lemon juice

1/2 tsp.chili powder

1/8 tsp. salt

Blend all ingredients in food processor until well blended. Chill before serving.

Hamburger Quiche

This is a great recipe to make on one of those days when you don’t want to spend all day in the kitchen. Creamy cheese taste that is sure to be requested again. Easy cooking recipe.

1(9in.) pie shell unbaked                                        2 eggs

1/2 lb ground beef                                                   1 T. cornstarch

1/2 cup mayonnaise                                                1 1/2 cup cheddar cheese

1/2 cup milk                                                              1/3 cup onions(chopped)

Brown and drain hamburger. Combine all ingredients. Pour into pie shell.

Bake at 350 degrees for 35 to 40 minutes.

Reuben Chicken

Savory chicken recipe the whole family will love. Add your  favorite pasta for a complete meal.
6 boneless skinless chicken breasts (1 1/2 pounds)
1/2 cup seasoned dry bread crumbs
1/2 cup shredded Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
2 eggs
2 tablespoons milk
2 tablespoons butter
1/2 cup finely chopped onion
1/2 cup finely chopped celery with leaves
3 cloves minced garlic
1/2 cup chopped fresh basil
2 tablespoons tomato paste
2 cans (15 oz ea) reduced sodium whole peeled tomatoes
6 ounces part skim Mozzarella cheese (6 slices)

Preheat oven to 425 degrees.Oil cooking pan. Trim and cut chicken into appropriate portions sizes. Beat together eggs and milk together. Place in pie plate or shallow bowl. Mix together bread crumbs, Parmesan cheese, salt and black pepper. Place in pie plate or shallow bowl. Dip chicken breasts in milk and egg mixture, coating well. Dip in cheese and crumb mixture, coating well. Place chicken on baking sheet. Bake 25-35 minutes or until cooked through. Remove chicken from oven; place a slice of Mozzarella cheese on each chicken breast and return to oven long enough to melt cheese. To serve, spoon a couple tablespoons tomato sauce on individual plates, top with chicken breast and melted cheese, spoon additional sauce over top (if desired, sprinkle with additional Parmesan cheese)

Taco Bake

This is a great recipe the kids will love.

10 Corn Tortillas
1 cup Sour Cream
1 Egg beaten
2/3 cup Milk
3 1/2 cups Monterey Jack Cheese shredded
1 can (4 oz. size) can Green Chiles
1 can (2 1/2 oz. size) can Olives sliced
1/4 cup Onion, minced

Cut tortillas into one inch strips and set aside.

Beat sour cream, egg, and milk together.

In a 3 quart casserole, layer 1/3 of tortilla strips, 1 cup monterey jack cheese, 1/3 of chilis, olives, onions, then 1/3 sour cream mixture. Repeat with two more layers.

Cover and bake at 350 degrees  for 20 minutes. Uncover, sprinkle with remaining cheese and return to oven for 5 minutes, or until cheese melts.

One Pan Stew Bake

This recipe is so easy to make and everyone will think you spent all day in the kitchen.

1 can (24oz.) beef stew

1/4 cup sour cream

1 cup biscuit mix

1/4 cup water

In casserole pan combine beef stew and sour cream. Bake in oven at 425 degrees. while that is baking mix biscuit mix and water to make a soft dough.  When stew is hot drop dough mixture by spoonfuls into stew bake about 20 minutes until biscuits are lightly browned. Makes about 2 to 3 servings for more just double up.

Quick and Easy Stroganoff

Mouth watering stroganoff that is very easy to make . This recipe is great for a quick dinner.

1 lb. ground beef

1 can(4oz.) sliced mushrooms, drained

1/2 cup chopped onions

1 tsp. salt

2 cups water

1 beef bouillon cube

1 1/2 cups minute rice

1/2 cup sour cream

Brown ground beef quickly with mushrooms, onions and salt stirring frequently. Stir in water and bouillon  cube. Bring to a full boil. Stir in rice. Reduce heat cover and simmer for 5 minutes. Remove from heat, stir in sour cream.
