My Favorite Blueberry Muffins

Blueberry muffins a favorite recipe of everyone, this is going to be requested over and over.

2 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1 egg beaten
3/4 cup milk
3 T. melted margarine
1 cup fresh blueberries

Sift flour,baking powder,salt and sugar together. Add the eggs,milk and margarine. fold in blueberries. Fill greased muffin pans 2/3 full. Bake at 350 degrees for 20 minutes.

Carrot and Zucchini Bread

This bread recipe is exceptionally moist. Very low calorie.

1/2 cup honey
1/4 cup canola oil
1 large egg
1 1/2 tsp. vanilla
3/4 cup flour
1/2 cup whole wheat flour
1/ cup oat bran
1 1/2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/8 tsp. salt
1 cup grated zucchini
1 cup shredded carrots
2 tsp. grated orange peel
1/4 cup walnuts (chopped)

Ina large bowl, whisk together honey, oil, egg, and vanilla. In another bowl add flours, oat bran, baking powder, cinnamon and salt. Mix well, then add dry ingredients to honey mixture, then add zucchini, carrots, and orange peel. Blend well then add walnuts. Spoon into loaf pan that has been sprayed with cooking spray, bake at 350 degrees for 50 to 60 minutes or until toothpick comes out clean.

Banana Bread

This a great tasting banana bread recipe.Even warm this banana bread recipe is great.

1 cup white sugar                                                  3/4 cup nuts

2 eggs                                                                       1/2 cup shortening

1 tsp. soda dissolved in                                            2 cups flour

1/3 cup milk                                                             2 mashed bananas

1/8 tsp. salt                                                              1 tsp. vanilla

Cream sugar and shortening, and eggs until well blended. Add mashed bananas, salt, vanilla,milk and flour mix well and add nuts. Bake in 2 greased and floured bread pans at 350 degrees for 45 minutes.

Peanut Butter Bread

This is a easy bread to make with a  rich peanut butter taste.

3/4 cup sugar

1/2 cup peanut butter

1 tsp. vanilla

1-3/4 cup milk

2-1/4 cup flour

4 tsp. baking powder

1/2 tsp.salt

Cream together sugar,peanut butter, and vanilla. Add milk and mix well. Combine flour, baking powder, and salt. Add to creamed mixture and beat well. Place in a greased loaf pan and bake at 350 degrees for 45-50 minutes or until golden brown. Let cool  for 10 minutes before removing from pan.

Golden Corn Bread

Corn bread you can make in a muffin pan. Or place corn bread batter in baking pan. Add this to a great breakfast. Warm corn bread is the best.

1 cup yellow cornmeal

1 cup sifted flour

1/4 cup sugar

1/4 cup soft shortening

4 tsp. baking powder

1 egg

1 cup milk

Sift dry ingredients, add milk, egg and shortening, beat until smooth (do not over beat) . Bake in 8 inch greased square pan. At 425 degrees 20 to 25 minutes.
