Cocktail Meatballs
Written by admin on July 26, 2008 – 12:08 pm -This is a great recipe for cocktail meatballs very quick and easy. Have made this real quick when need some thing fast for unexpected quests. I add some spices extra spices. But just as good this way.
1 lb. ground beef
2 T. minced onion
1 cup fine cornflakes crumbs
1 tsp. cornstarch
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. allspice
1 cup milk
Oil for deep frying
Mix all the ingredients together except the oil, form into small balls. Then deep fry balls about 2 minutes. Drain on paper towel. Serve hot with toothpick.

Sausage Balls
Written by admin on June 8, 2008 – 1:19 pm -This is guaranteed to be a hit. So quick to make and very low cost. This is a great appetizer for those summer parties. My family loves them.
1 lb. bulk hot Italian sausage ( browned and drain, and cooled)
1 lb. grated cheddar cheese
3 cups Bisquick
3/4 cup water
Mix Bisquick and water together. Add sausage and cheese. Roll into small balls and bake at 400 degrees for 10 to 12 minutes. Should get about 10 dozen.

Low-Calorie Nacho Dip
Written by admin on May 21, 2008 – 10:23 am -This is a great dip with out all the fat, you can use no salt chips to help with the fat. I have made this several time and no one knows it has ground turkey instead of hamburger. Not worried about the calories just add ground beef instead.
1 1/2 lb. ground turkey
2 pkg. taco seasoning mix
1 can refried beans
1 med. container low-fat sour cream
1 (16 oz.) jar salsa
1 jar Mexican Cheez Whiz
2 bags tortilla chips (any brand, with or without salt)
Brown and drain ground turkey Add taco seasoning packets and mix well. Put in shallow casserole dish. Top with sour cream and then with salsa. Add cheese on top of this. Put in microwave until cheese is bubbly.

Stuffed Cherry Tomatoes
Written by admin on May 6, 2008 – 5:10 pm -This is a great finger food for all those graduation parties coming up. You could double the recipes with out any problems, also this is not going to cost a lot. This is a great recipe.
16 cherry tomatoes
1 can tuna in water
2 tablespoons low-fat yogurt
2 teaspoons finely chopped green onion
2 teaspoons chili sauce
1/4 teaspoons prepared horseradish
1/8 teaspoons ground black pepper
With a sharp knife, slice tops of tomatoes. With a grapefruit spoon remove pulp; drain upside down on papertowel.
Combine remaining ingredients, spoon mixture into tomatoes, refrigerate about 1 hour before serving.

Mexican Cheese Dip
Written by admin on April 22, 2008 – 6:30 pm -This is a great dip recipe. This is surely going to be ask for again. Great because there is only 75 calories in about 1/2 cup serving.
1 cup plain low-fat yogurt
1/2 cup low-fat cottage cheese
2 tablespoons unsalted butter
1 clove of garlic (minced)
2 tablespoons chopped green chilies
1 teaspoon chili powder
1/8 teaspoon ground black pepper
Mix all ingredients together, cover and refrigerate for about 1 hour. Stir well and serve with your favorite vegetables.

Guacamole

1 1/4 lb. avocado, peeled and cut into chunks
1 large tomato, peeled, seeded, cut in to eights
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup plain yougurt
1 tbs.lemon juice
1/2 tsp.chili powder
1/8 tsp. salt
Blend all ingredients in food processor until well blended. Chill before serving.

Low Calorie Popsicles
Written by admin on February 28, 2008 – 6:18 am -I found this recipe in a magazine a long time ago and make it all the time in the summer time for the kids when my daughter was little I would make it for the whole neighbor hood, they all love them. And it was very good for the .
1 pkg sugar free jello (any flavor)
1/4 cup non-fat vanilla yogurt
1 c. boiling water
Boil 1 cup of water and mix with your favorite flavor of sugar-free jello.
Refrigerate for 5 minutes.
Mix in 1/4 cup of non-fat vanilla yogurt and pour into popsicle maker or small paper cups (add a stick after it’s partially set). Freeze.

Deviled Eggs

12 hard-cooked eggs
2 to 2 1/2 tablespoons mayonnaise, or to moisten
2 teaspoon prepared mustard, or to taste
1 teaspoon salt
4 tablespoons sweet pickle relish, or to taste
paprika
Cut hard-cooked eggs in half lengthwise. Remove and mash the yolks; combine with mayonnaise, mustard, salt, and relish. Refill centers of the egg whites with the mixture. Garnish with ground paprika.

Spinach Dip

1 1/2 cup mayonnaise 1/2 cup chopped onions
1/2 cup sour cream 1/2 cup chopped parsley
1 pkg.frozen chopped spinach 1/2 tsp. salt
cooked and drained 1/2 tsp pepper
Combine all ingredients and serve crackers or raw veggies.

Spicy Snack Mix
Written by admin on January 27, 2008 – 11:37 am -At your next big party serve this great low calorie appetizer. It is delicious and guilt free and guaranteed to be the hit of the party.
3 T. sugar
2 tsp.cinnamon
3 cups multi grain cereal (like Chex)
2 cups toasted oat cereal (like Cheerios)
1 cup mini pretzels
1 bag single serving plain popcorn,
popped according to package directions. (6 cups total)
1/2 cup dried cranberries
1/4 cup vegetable oil
3 T. hot sauce
Heat oven to 350 degrees. Mix together sugar and cinnamon. In a large bowl, put in cereals, pretzels, popcorn, and cranberries. Drizzle with vegetable oil and hot sauce, then sprinkle sugar mixture. Stir well till all coated. Spread mixture onto cookie sheet. Bake at 350 degrees for 20 minutes stirring twice. Can be stored in airtight container till ready to serve.
Per 1/2 cup serving: 97 calories 3 g. fat 1 g. protien178 mg. sodium, 0 mg cholesterol
