Pumpkin Cookies

Recipe for great pumpkin cookies. This is really easy to bake. I always add some pumpkin allspice to mine just a little sprinkle, adds a little more spice taste.
2 cups butter
2 eggs
2 tsp. vanilla extract
2 tsp. baking powder
1 tsp. salt
1/2 tsp. allspice
1 cup chopped walnut
2 cups sugar
2 cups canned pumpkin
4 cups flour (sifted)
1 tsp. baking soda
2 tsp. cinnamon
2 cups raisins
Blend all the ingredients together and roll into small balls on to greased cookie sheet. Bake at 350 degrees for about 15 minutes.
Gingersnaps

This is just the best recipe for gingersnaps. The easy one. The recipe grandma use to use. Home made cookies are always the best.
1 1/2 cup shortening
2 cups sugar 2 eggs
1/2 cup molasses
4 cups flour
2 tbsp. ginger
4 tsp soda
1 tsp. salt
2 tsp. cinnamon
Beat together the sugar, shortening,eggs and the molasses. Add flour, ginger, soda, salt, and cinnamon. Mix well. Shape into small balls and roll in sugar and bake at 375 degrees for 10 to 12 minutes.
Mini Bacon Quiches

Are you counting calories ? Or do you have last minute quests coming? Either why this is the perfect recipe. These only have 54 calories each and 3 grams of fat. So enjoy.
1 egg lightly, beaten
1/2 lb of bacon cooked and crumbled
1/2 cup reduced- fat ricotta cheese
1/2 cup part - skim shredded mozzarella cheese
1/2 cup reduced - fat shredded cheddar cheese
1 small onion chopped
1/4 tsp. garlic powder
dash of pepper
dash of cayenne pepper
2 packages frozen miniature phyllo tart shells
Combine first 9 ingredients. Place tart shells on an ungreased baking shee, fill each with about 2 teaspoons of the mixture.
Bake at 350 degrees for 8 to 10 minutes or until filling is set and shells are lightly browned. Serve warm.
