Malted Milk Balls Cookies

 Recipes with candy are always a hit. Again chocolate is one of my favorite things, and I found this recipe uses the whopper candies and just had to try them they were a big hit the whole family loved them. So thought I would share.

2 1/4 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup butter, room temperature
1 cup sugar
1/2 cup milk
1 tsp vanilla extract
1 1/2 cups roughly chopped maltesers/whoppers/malted milk balls

Preheat the oven to 350F and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Stir in milk and vanilla, then gradually blend in the flour mixture. Do not mix to much; stir only until no streaks of flour remain. Stir in the chopped Whoppers/Malted Milk Balls.
Drop into 1-inch balls (tbsp sized balls) on the prepared baking sheet and bake for 12-14 minutes, until lightly browned.
Cool on baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.

Mexican Cheese Dip

This is a great dip recipe. This is surely going to be ask for again. Great because there is only 75 calories in about 1/2 cup serving.

1 cup plain low-fat yogurt

1/2 cup low-fat cottage cheese

2 tablespoons unsalted butter

1 clove of garlic (minced)

2 tablespoons chopped green chilies

1 teaspoon chili powder

1/8 teaspoon ground black pepper

Mix all ingredients together, cover and refrigerate for about 1 hour. Stir well and serve with your favorite vegetables.

Barbecue Sauce

Barbecue sauce for your favorite meat dish. This recipe only has 25 calories per serving. I use this to make ham barbecue for parties I attend quick to make add this to your favorite ham put it in a crock pot and you are done. Home made barbecue sauce that is very yummy.

1 can (8 oz.) low-sodium tomato sauce

1 tablespoons light brown sugar

2 tablespoons white vinegar

2 tablespoons minced onion

1 1/2 tablespoons chilli powder

1 garlic clove, minced

1 tsp. dry mustard

Over medium heat combine all ingredients in small saucepan, stirring frequently. About 15 to 20 minutes until slightly thickened.

No Crust Pie

This pie recipe is so quick and easy. No crust to prepare which for me always seems to be the hardest part, so no one can say the crust was no good.

2 cups milk                                     3/4 cup coconut

3 lg. eggs                                           1 tsp vanilla

1/2 cup sugar                                  dash of salt

1/2 cup flour                                    1 tsp. baking powder

1/2 cup margarine

Beat all ingredients together in a blender for 1 minute. Pour into a 9 inch pie pan.

Bake at 350 degrees for 45 minutes.

Quick Rising Pizza Dough

This is a great recipe for making dough to add your favorite topping to make a great pizza the whole family will love.

1 1/4 ounce envelope quick rising yeast

2 to 2 1/4 cups unbleached flour

1 tsp. sugar

1/2 tsp. salt

2/3 cup hot water ( should be around 125 degrees)

2 tbs. olive oil

Blend the yeast with 2 cups of flour, the sugar and salt. Slowly add the water followed with the olive oil. Mix until a ragged mass is formed, keep  the rest of the flour till a nonsticky ball of dough forms. Put the dough on  a work surface and knead for 6 to 8 minutes until smooth and elastic.

Put the dough in a oiled bowl and turn it so that it is all coated with oil, cover with plastic wrap and a kitchen towel. Set in warm place for about 25 to 30 minutes.

Place the dough on a floured surface and roll and stretch into a 13 to 14 inch circle . Place on lighty oiled pizza pan.

Low Calorie Brownies

Great low calorie Brownies. This is a great recipe.

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup unsweetened cocoa powder
1 tablespoon warm water
1 teaspoon pure vanilla extract
1/2 teaspoon instant espresso powder
1/2 cup butter, cut into small cubes
4 ounces dark or bittersweet chocolate room temperature & chopped into pieces
1 large egg, lightly beaten
2 large egg whites, lightly beaten
1/3 cup sugar
1/3 cup Splenda

In a small bowl, sift flour and baking powder together; set aside.

In another small bowl, blend the cocoa, water, vanilla, and espresso powder together; set aside.

In a large metal bowl set over a pan of hot, not simmering, water (bottom of the bowl should not touch the water), combine the butter and chocolate and let stand, stirring occasionally, until smooth and melted. (The mixture can be melted in the microwave on high power, stirring every 15 seconds. Remove when there are still a few lumps of chocolate and stir until fully melted).

In a medium-size bowl, combine the beaten eggs, sugar, and Splenda. Stir in the cocoa mixture. Add the melted chocolate/butter mixture and stir to combine. Stir in the flour mixture until mix , do not over stir.

Pour the batter into a lightly greased pan and smooth the top. Bake until a toothpick inserted into the center comes out with a few moist crumbs attached, 18 to 20 minutes, rotating the pan halfway through baking (do not overbake - the brownies will still look under baked when you take them out of the oven. They will set up as they cool). Remove from oven and let cool completely, approximately 1 hour, on a wire rack before cutting.Bake at 375 degrees. For more ideas like this check out this site.
