Irish Milkshake

This is so good, very refreshing on a hot summer day by the pool.
1/2 cup skim milk
1/2 cup plain low-fat yogurt
2 tsp. sugar
1 tsp. instant coffee
1 tsp. irish whiskey
Blend all ingredients in blender for about 30 seconds.
Guacamole
This is one of our favorites. This is such a yummy recipe.
1 1/4 lb. avocado, peeled and cut into chunks
1 large tomato, peeled, seeded, cut in to eights
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup plain yougurt
1 tbs.lemon juice
1/2 tsp.chili powder
1/8 tsp. salt
Blend all ingredients in food processor until well blended. Chill before serving.

Use skim or low-fat milk and cheese made from skim or low-fat milk
Cut back on the amount of fat you use in cooking
Use water-packed tuna instead of oil-packed
Choose lean cuts of meat
Trim visible fat from meat
Roast, bake, broil, or simmer meats and drain fat after cooking. Don’t fry
Remove the skin of cooked poultry
Use smaller amounts of meat and stretch it by serving in casseroles with grains and vegetables
In a dip or sandwich filling, replace all or part of the mayonnaise with yogurt
Serve Canadian bacon instead of regular bacon
Use vegetable or peanut oils instead of solid shortening and use margarine instead of butter or lard
Try substituting egg whites in recipes calling for whole eggs
HOT CHOCOLATE MIX

Great to make ahead and keep for the kids or when company drops by. This is a easy hot chocolate recipe that will be a hit.
1 box of powdered milk (8 quart)
2 c. powdered sugar
1 (16 oz.) jar non dairy creamer
1 (16 oz.) can instant chocolate drink mix
Combine all ingredients. Mix well. Store in airtight container. Use up in 6 months. 1 serving: add 3 tablespoons of mix to 1 cup hot water. Stir to dissolv
My Favorite Blueberry Muffins

Blueberry muffins a favorite recipe of everyone, this is going to be requested over and over.
2 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1 egg beaten
3/4 cup milk
3 T. melted margarine
1 cup fresh blueberries
Sift flour,baking powder,salt and sugar together. Add the eggs,milk and margarine. fold in blueberries. Fill greased muffin pans 2/3 full. Bake at 350 degrees for 20 minutes.

Waldorf Salad

Have 3/4 cup of this great Waldorf salad and only 200 calories. Easy to make and it will surely be a favorite.
2 small apples, cored and chopped (1 1/3 cups)
2 small pears cored and chopped (1 1/2 cups)
1 small banana
1/2 avocado
1/2 sup chopped celery about 2 medium stalks
1/4 cup raisins
12 walnut halves chopped
1/2 cup plain low-fat yogurt
1 tbs. mayonnaise
1 tsp. lemon juice
Combine all ingredients and mix well. Cover and refrigerate for 2 hours and enjoy.

Appetizer Meatballs

Prepare ahead for a quick treat. This meatball recipe is going to be requested again and again.
I egg, slightly beaten
1/3 cup milk
1/3 cup fine, dry breadcrumbs
1 tablespoon dried minced onion
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon ground allspice
1 Ib. lean ground meat
Combine ingredients and shape into 1-inch balls. Place on rack in a 12″ x 7-1/2″ baking dish. Cover with a paper towel. Raise oven shelf. Cook on HIGH 4 to 7 minutes. BROWN 6 to 7 minutes. Makes about 25 meatballs.
Coco-Banana Shake

Low calorie shake. This a great coco banana shake that is so yummy. Only 190 calories per serving.
1/2 cup skim milk
1/2 cup plain low-fat yougurt
1/2 small ripe banana mashed
1 tsp. sugar
1/2 tsp. vanilla extract
1/2 tsp. coconut extract
1 ice cube
Blend all ingredients at low speed about 30 seconds. Enjoy
